GARDEN FRESH VEGETABLE BUNDLES

Ingredients

  • 6 large sheets of heavy-duty foil
  • Pam cooking spray
  • 2 cups cubed potatoes
  • 2 cups sliced zucchini
  • 1 cup sliced carrots
  • 1 cup diced red bell pepper
  • 1 cup diced green bell pepper
  • 1 cup broccoli florets
  • 1 cup diced sweet onion
  • 1 large ear of corn, cut into 6
  • pieces
  • 1/4 cup Vegetable oil
  • 3 teaspoons Creole Seasoning
  • Garlic salt

Directions

  • DIRECTIONS:
  • Preheat oven to 450*. Spray each sheet of foil with the Pam spray. In a large bowl, Combine the next 8 ingredients;ending with corn. Toss with Oil. Evenly divide vegetable mixture among sheets of prepared foil. Sprinkle with Creloe seasoning and garlic salt. Bring side of the foil to the center and fold over to seal. Fold ends to center to create a bundle. Repeat with reamining packets.Place bundles on cookie sheet; bake for 30 minutes or until veggies are tender.

Notes

It's summertime and with ALL the fresh veggies from the garden, this is a wonderful way to make use of all of Natures Bounty! Recipe calls for cooking in the oven but I've fixed on the grill also. Very tasty!
