Garlic Ginger Chicken
1 lb boneless/skinless chicken breast
2 Tbsp olive oil
6-8 garlic cloves
1 16oz package fresh mushrooms (sliced)
2 Tbsp brown sugar
2 tsp ground ginger
1/4 tsp red pepper
1/2 cup chicken broth
4 cups cooked rice
Rinse and lightly salt chicken and set aside.
Coat large skillet with olive oil and set over medium heat.
Add garlic and sugar and stir frequently until mixture is carmelized.
Add mushrooms, thyme, ginger and red pepper and cook, stirring frequently until mushrooms are significantly reduced in size.
Add chicken to pan and brown on both sides.
Reduce heat to simmer and pour in chicken broth.
Turn chicken only a few times while cooking.
Cook approximately 30 minutes or until chicken is done.
Serve over cooked rice.
