Garlic Leek Soup

Serves 8 | Prep Time 20 | Cook Time 40

Ingredients

1 tbsp. Oil
4 cloves garlic, minced
2 onions, minced
1 large carrot, peeled and diced
3 medium leeks, rinsed and sliced (white and light green parts only)
1 lb. potatoes, peeled and chopped into 1-inch pieces
1 c. chicken broth
1 1/2 c. Milk
2 tsp. thyme
1 tsp. chives
sea salt and black pepper to taste
1/4 c. fresh chives, chopped


Heat oil in a large soup pot. Add garlic, onions, carrots and leeks. Cook for 5 minutes, or until soft. Add potatoes, broth, milk, thyme and chives. Bring to a boil, then turn down to a simmer and cook for about 25 minutes, or until potatoes are fork-tender. Adjust seasoning to taste. Serve with cornbread.
