GARLIC SHRIMP WITH VEGETABLES

Ingredients

  • 3 oz. canned tiny shrimp, drained & rinsed
  • 1/4 cup cherry tomatoes, cut in half
  • 1/4 cup zucchini, diced
  • 1/4 cup shredded carrots
  • 2 Tbsp. chopped green pepper
  • 1 Tbsp. chopped onion
  • 1 tsp. minced garlic
  • 1 tsp olive oil
  • 1/8 tsp. black pepper
  • 1/4 tsp. parsley

Directions

  • Place shrimp and vegetables in foil. Drizzle with olive oil and sprinkle with seasonings. Bake in oven at 350 F until vegetables are tender. Enjoy.
