Garlic pasta with fresh tomato
0.7 fl oz extra virgin
orgranic olive oil
10.5 oz fresh tomatoes-finely chopped
3/4 cloves of garlic
17.6 oz pasta
1 cinnamon stick
ground black pepper
the zest of 1 orange
Pairs Well With
Step 1: Boil the pasta in a saucepan in salted water. When done, drain the pasta and add a little olive oil.
Step 2: Heat a little olive oil in a shallow saucepan and lightly sauté the garlic.
Step 3: Add the tomato, orange zest, rosemary, sugar and salt and mix continuously until all excess liquid is absorbed.
Step 4: Just before the sauce is ready, add the cinnamon and pepper.
Step 5: As soon as the sauce has thickened, combine it with the pasta while at the same time mixing well.
Step 6: Serve in shallow plates, optionally garnishing with a twig of rosemary.
