Geeg's Potato Soup

Serves 4-6 | Prep Time | Cook Time

Ingredients

3-4 medium potatoes
2 big slices of onion chopped
salt
2 TBS Oleo
whole milk


Cover potatoes and onions with water and boil until soft. Drain off most of the water. Add Oleo and slowly stir until lumps are gone. Add enough milk to consistency desired. Salt and pepper to taste. Can be frozen.

This recipe came from my grandma, Geeg. We always had it on Christmas Eve and it's one of my favorites.

This sounds almost identical to the potato soup I have been making all my life. I learned it from my mom, and it's in my head. I don't have it written down. The only thing I add is some pepper. I will have to say this is a delicious recipe.
