German Style Potato Salad

Why I Love This Recipe

This is from Ron, my old boss. Great guy, great recipe!


Ingredients You'll Need

4 med. potatoes
4 slices bacon
1/2 cup chopped onions
1 tbsp flour
1 tbsp sugar
3/4 tsp salt
1/2 tsp celery seed
1/8 tsp pepper
1/2 cup water
1/4 cup vinegar
1 hard boiled egg, chopped


Directions

In a covered saucepan, cook potatoes in boiling salted water for 20 to 25 minutes, until just tender; drain well. Cool slightly, peel and slice potatoes. Set aside.


For dressing, in a large skillet, cook bacon until crisp. Drain and crumble, reserving 2 tbsp drippings. Set the bacon aside. Add chopped onions to drippings and cook until tender. Stir in flour, sugar, salt, celery seed and pepper. stir in water and vinegar. Cook and stir until thickened and bubbly. Stir in potatoes and bacon. Cook for another 2 to 3 minutes more or until heated through, stirring gently. Season to taste. Transfer to a serving bowl.
