GERMAN SWEET CHOCOLATE CAKE (MARY LUST)

Ingredients

  • Cake:
  • 1 pkg German Sweet chocolate (4 oz)
  • ½ C boiling water
  • 1 C butter
  • 2 C sugar
  • 4 egg yolks, unbeaten
  • 1 tsp vanilla
  • 2-½ C sifted cake flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 C buttermilk
  • 4 egg whites, stiffly beaten
  • Frosting & Filling:
  • 1 C evaporated milk
  • 1 C sugar
  • 3 egg yolks
  • 1 tsp vanilla
  • 1-1/3 C coconut
  • 1 C chopped nuts

Directions

  • Cake:
  • Melt chocolate in boiling water.
  • Mix and Cool.
  • Cream butter and sugar until fluffy.
  • Add yolks, one at a time, and beat well after each.
  • Add melted chocolate and vanilla.
  • Mix well.
  • Sift together flour, salt and soda.
  • Add alternately with buttermilk to chocolate mixture, beating until smooth after each addition.
  • Fold in beaten egg whites.
  • Pour into three 8" or two 9" round layer pans lined on bottom with paper.
  • Bake at 350 degrees for 30-40 minutes.
  • Cool.
  • Frost tops only.
  • Frosting & Filling:
  • Combine and cook evaporated milk, sugar, egg yolks, and vanilla, stirring until thickened (about 12 minutes).
  • Add coconut and chopped nuts.
  • Beat until thick enough to spread.
