  • 2 oz soy sauce
  • 2 oz dry sherry
  • 1 tbs toasted sesame oil
  • A one inch chunk of fresh ginger
  • 1 tsp of wasabi paste
  • 1 clove of garlic


  • Put the soy sauce, sherry and sesame oil in a bowl
  • Stir the wasabi paste into the soy sauce, sherry and sesame oil
  • Taste the mixture and add more wasabi if desired
  • Carefully trim the peel off the ginger
  • Finely mince the ginger and add it to the bowl
  • Peel the skin off the garlic and smash the clove
  • Finely mince the garlic and add to the rest. Mix well
  • Place in an airtight container and refrigerate over night
  • Use as a dipping sauce or marinade
  • Alternatively, you could just whizz all the ingredients together
