GINGER CARROT SOUP

- 3 large carrots
- 1 teaspoon minced ginger or ginger root
- 1 cup water, soy milk or other liquid
- 1/2 veggie broth bouillon cube
- Combine all ingredients in the Vitamix. Turn Vitamix on high for about 5 minutes, until steaming hot and creamy.
- Serve and enjoy!
