GINGER CARROT SOUP

Ingredients

  • 3 large carrots
  • 1 teaspoon minced ginger or ginger root
  • 1 cup water, soy milk or other liquid
  • 1/2 veggie broth bouillon cube

Directions

  • Combine all ingredients in the Vitamix. Turn Vitamix on high for about 5 minutes, until steaming hot and creamy.
  • Serve and enjoy!

Notes

When winter is here in the mountains of Montana, I often want a warm soup that is quick, nutritious and easy. This is it!
