Ginger Chicken Soup

This is my comfort food... When I was a kid my mom would cook this when i got home from school or if im not feeling well... This is a Filipino dish which you can served too with a hot fluffy rice..

INGREDIENTS

  • Cooking Time: 30-35
  • 2 Tbsps. corn oil
  • 3-4 clives of garlic, crushed
  • 30 g. ginger, peeled and diced into rounds
  • 1kg.{2 lb.} whole chicken, cut into serving pieces
  • 1 1/2 liters {6 cups}water
  • 200 g.{7oz.} raw papaya, peeled and cut into serving pieces
  • 2 tbsp.fish sauce
  • 1 tbsp. salt
  • 1 1/2 cup spinach or watercress

DIRECTIONS

Heat oil in a casserole and saute garlic for 1 minute.


Add ginger and chicken and brown chicken lightly, then pour in the water.


Simmer chicken until almost tender, about 20 minutes.


Add papaya and season with fish sauce and salt.


Allow to simmer over medium heat until chicken is fully cooked and papaya is tender, about 10 more minutes.


Stir in spinach or watercress.


Heat through.


Serve.
