GINGER CHICKEN SOUP

Ingredients

  • 2 Tbsps. corn oil
  • 3-4 clives of garlic, crushed
  • 30 g. ginger, peeled and diced into rounds
  • 1kg.{2 lb.} whole chicken, cut into serving pieces
  • 1 1/2 liters {6 cups}water
  • 200 g.{7oz.} raw papaya, peeled and cut into serving pieces
  • 2 tbsp.fish sauce
  • 1 tbsp. salt
  • 1 1/2 cup spinach or watercress

Directions

  • Heat oil in a casserole and saute garlic for 1 minute.
  • Add ginger and chicken and brown chicken lightly, then pour in the water.
  • Simmer chicken until almost tender, about 20 minutes.
  • Add papaya and season with fish sauce and salt.
  • Allow to simmer over medium heat until chicken is fully cooked and papaya is tender, about 10 more minutes.
  • Stir in spinach or watercress.
  • Heat through.
  • Serve.

Notes

This is my comfort food... When I was a kid my mom would cook this when i got home from school or if im not feeling well... This is a Filipino dish which you can served too with a hot fluffy rice..
