  • 1 C White flour
  • 1 C Whole Wheat flour
  • 1 T baking powder
  • 4 tsp ground ginger
  • 1 tsp cinnamon
  • 1 C packed brown sugar
  • 2 egg beaters
  • 1/2 C honey
  • 1/2 C butter - melted
  • 3/4 C milk
  • ground ginger to taste


  • Preheat oven to 350. Line 12 terra cotta pots with parchment paper. Sift flours, baking powder, ginger, and cinnamon into a bowl. In a separate bowl combine all remaining ingredients and beat until smooth. Add dry ingredients and spoon batter into the pots
  • Bake 20 minutes, remove pots from oven and cool 10 minutes. Frost with a creme cheese frosting.


The original recipe came from the 500 Cupcakes cookbook although I altered it a bit. I made these cupcakes for my sister's Hawaiian themed wedding in August and got rave reviews.
