GINGERBREAD MUFFINS WITH LEMON GLAZE

Ingredients

  • For Gingerbread
  • 1 Full box Dassant Ginger Gingerbread Mix
  • 1 large egg
  • 1/3 cup vegetable oil
  • 3/4 cup water
  • For Lemon Glaze
  • 1 3/4 cups powdered sugar
  • 5 tablespoons lemon juice
  • 1 tablespoon lemon zest

Directions

  • For Gingerbread
  • Preheat oven to 400° F.
  • Lightly grease standard muffin tins with butter or cooking spray.
  • Whisk together egg, oil and water. Add mix.
  • Blend until smooth, approximately 30 to 45 seconds.
  • Pour batter into muffin tin 2/3 full and bake for 14-16 minutes.
  • For Lemon Glaze
  • Whisk powdered sugar and lemon juice together until a smooth consistency. Drizzle glaze over warm muffins and sprinkle with lemon zest.
