GINGERED CHICKEN WITH MANGO

Gingered Chicken with Mango


INGREDIENTS

  • Cooking Time: 45-50
  • Servings: 4
  • 1/4 cup olive oil
  • 2 cloves fresh garlic, crushed
  • 2 pounds chicken breast, skinned and boned
  • 1 cup fresh mango, peeled and diced
  • 1/4 cup dark brown sugar
  • 1/4 tsp fresh ground cloves
  • 1 TBSP fresh ground ginger root, grated
  • 1/4 tsp fresh nutmeg, grated
  • 1 tsp soy sauce
  • salt and pepper to taste

DIRECTIONS

Heat the oil on medium heat in a heavy pan. Add the chicken and brown on both sides. Continue cooking for about 15-20 minutes until the chicken is cooked through. Reduce heat, add garlic, being careful not to burn it.


2. While chicken is cooking, in a medium-sized bowl, combine the mango, sugar, cloves, ginger and nutmeg.


3. Pour the mixture over the cooked fillets and gently mix to cover the chicken pieces. Add soy sauce, salt and pepper. Cook for about 10 more minutes. Serve with a side dish of rice.
