GINGERED KETCHUP

Ingredients

  • 1/4 cup white wine vinegar
  • 1/4 cup red onion, minced fine
  • 2 TBS minced fresh ginger
  • 2 TBS sugar
  • 1/4 cup ketchup
  • 1 TBS jalapeno, seeded and minced
  • 1 TBS fresh lime juice
  • salt to taste

Directions

  • Combine vinegar, onion, ginger and sugar in a small saucepan. Bring to a simmer, cooking until vinegar is nearly evaporated. Remove from heat
  • Stir in ketchup, jalapeno, lime juice and salt. Chill until ready to serve. Terrific on beef or pork
