Gingersnap Pumpkin Pudding
1 3/4 cups milk
1 package pudding mix - cheesecake or vanilla
1/2 cup pumpkin puree
1/2 teaspoon pumpkin pie spice
10 gingersnap cookies
1 cup whipped topping
Whisk together milk and pudding. Stir in pumpkin spice, let stand 2 minutes.
Crush 7 cookies. Add whipped topping to pudding mix.
Sprinkle with cookie crumbs and serve garnished with remaining cookies.
