Glauber Family's Blueberry Sour Cream Muffins
1/2 cup margerine (softened)
3/4 cup sugar
2 large eggs
1 1/2 teaspoon vanilla extract
1 cup blueberries*
1/2 teaspoon salt
2 cups flour
1/2 teaspoon baking soda
3/4 cup sour cream
Preheat oven to 375 degrees Fahrenheit (185 degrees Celcius). Prepare (butter and flour) muffin tin or place cupcake liners in the moulds.
Cream margarine and sugar in a large bowl.
Add eggs one at a time, while beating.
Beat in vanilla and sour cream. Set aside.
Combine flour, baking soda, and salt.
Stir mixture into butter mixture.
Gently fold in blueberries.
Spoon batter into muffin tins and sprinkle with sugar.
Bake for 23 minutes.
*other berries or seasonal fruits can be substituted such as strawberries, raspberries, peaches or nectarines.
