Glazed Pineapple Cookies
2 cups flour
1 1/2 tsp baking powder
1/4 tsp salt
3/4 cup crushed pineapple
1/2 cup shortening
1 cup brown sugar, packed
1 tsp vanilla
1 cup powdered sugar
2 Tbsp pineapple juice
Preheat oven to 325 degrees.
Grease cookie sheets
Drain pineapple, reserving juice.
In a large bowl, cream shortening and brown sugar.
Beat in egg.
Add pineapple and vanilla; mix well.
Add flour and other dry ingredients. Stir to combine.
Drop by rounded teaspoon, 2 inches apart on prepared cookie sheets.
Bake 18 to 20 minutes.
Make glaze by mixing the powdered sugar with enough of the reserved juice to make a drizzling consistency.
Drizzle over the cooled cookies.
Pairs Well With
A soft but chewy cookie. The pineapple is a nice change of pace.
