From the General Store's Cookbook (Specialty shop in Minnetonka, MN), page 361. Gloria is the owner's mother, and told my sister and I about making these bars when her husband was stationed overseas in Asia many years ago, cutting these bars into tiny squares to serve as was the custom where they were living at the time.


  • 29 oz can pumpkin
  • 12 oz can evaporated milk
  • 1 cup sugar
  • 3 eggs
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1 box yellow cake mix
  • 2 cups chopped pecans or walnuts (optional)
  • 1 cup melted butter
  • Topping/Frosting:
  • 1/2 cup powdered sugar
  • 2 cups whipping cream
  • 1 tsp vanilla


  • Preheat oven to 350F. Line 9x13 pan with waxed paper or parchment. Mix first 6 ingredients and pour into lined pan. Sprinkle cake mix on top of mixture and pat nuts onto cake mix, if desired. Spoon the melted butter over the mixture. Bake 1 hour 10 minutes (knife inserted should come out clean). Cool 20 minutes, then run knife along edges, and turn over onto serving tray (it will be upside down). Peel waxed paper off and refrigerate until cool. Prepare topping by beating the whipping cream, adding powdered sugar and vanilla, then frost.
