Gloria's Gluten Free Flour
3 cups (480 g) brown rice flour
3 cups (480 g) white rice flour
1 cup (192 g) potato starch
1 cup (128 g) cornstarch
1 cup (120 g) tapioca flour
1 tablespoon (15g) xantham gum
Combine all the ingredients in a mixer bowl using a paddle attachment or hand mixer and mix for about 2 minutes under low speed until well combined. Put the flour mix in an air tight container and place it in the refrigerator.

I usually make 3 batches at one time so I don't want to run out in the middle of a recipe.
