Gluten & Dairy Free Pumpkin Pie Muffins
1 1/2 cups of oat flour
1 cup of pumpkin puree
1/2 cup packed brown sugar
1 tsp of baking powder
1/2 tsp of baking soda
1 tsp of cinnamon
1/2 tsp of nutmeg
1/4 tsp of ground ginger spice
1/4 tsp of cloves
1/4 tsp of salt
1/2 cup of honey
1/4 cup of apple sauce
1/4 cup of coconut oil (melted)
optional: chocolate chips or walnuts
1. Preheat the oven to 350 degrees F (175 degrees C).
2. Mix all the dry ingredients in a large bowl, stir with a fork then add all the wet ingredients with a spatula until they are combined together well.
3. Spoon batter into 12 paper-lined or greased muffin cups, filling the cups 3/4 full.
4. Bake 22-25 minutes or until fork or toothpick inserted in a muffins's center comes out clean.
