cupcake liners
Oven pre-heated to 350
Ingredients:
20 oz white kidney beans (well-drained)
1/2 tsp baking powder
1/2 cup honey
2/3 cup unsweetened organic applesauce
2 organic eggs
2 tsp ground cinnamon
1/16 tsp ground cardamom
1 tsp vanilla extract
Topping:
1 tsp ground cinnamon
3 tablespoons organic butter (at room temp)
1/4 cup brown rice flour
Directions
Step One:
Combine all ingredients in blender. Mix until smooth.
Step Two:
Fill cupcake liners almost to the top
Step Three:
Combine topping ingredients until it looks like lumpy wet sand.
Step Four:
Generously top each cupcake with topping mixture
Step Five:
Bake in oven for 35-40 minutes or until a toothpick comes out clean
