Gluten Free Cupcakes
My youngest sister is gluten intolerant so whenever I'm having a family dinner, I reach for this recipe to make for her, so she can have dessert also.
INGREDIENTS
- 1/3 cup butter
- 1/4 tsp vanilla
- 1 tsp baking powder
- 1/3 cup sugar
- 1 cup corn starch
- 3 Tbsp milk
DIRECTIONS
Mix well. Pour into well greased muffin tins or sprayed with oil. Remember, NO FLOUR. Bake at 375 for 12-15 minutes. Can add chocolate chips and pecans. YUM! These are really good!

I added a little more milk to smooth out the batter a bit more, but stuck to the recipe exactly everywhere else. Fantastic! Light and fluffy and fun.
Heavier stuff (I think maybe in my thinner batter?) sunk to the bottom (chocolate chips and pecans).
Next step, I'm going to try adding lemon zest.

My best friend just found out she has to go gluten free. Can't wait to try this.
Tried these today. Put zest and juice of one lemon in cupcakes and topped with chocolate frosting. My first try at a gluten free recipe. It was a hit!

mix your heavier stuff with 1/2 of the cornstarch and it won't sink to the bottom when you mix it in and put it in the liners.
