Why I Love This Recipe
This recipe is most likely based on a weight watchers one, however fits both slimming world and weight watchers diets as free foods. It is filling and surprisingly tasty. I expected it to be bland. You can however add herbs and spices to your own taste, a bit of chilli would add a nice kick.
Ingredients You'll Need
2 x 400 g tins chopped tomatoes
8 carrots, chopped
4 small onions, chopped
4 courgettes, chopped
2 gluten free vegetable stock cubes
1 litre water
salt and pepper
Place all ingredients into a large pan, cover and cook for 20-30 minutes, or until the vegetables are cooked.
