Serves 4 | Prep Time 10 minutes | Cook Time 15 minutesWhy I Love This Recipe
This is in a book called "low-fat cook book, which is a very small book, which was given to me as a Christmas present from a flatmate. i did all the recipes in the book one year and found some recipes that i loved and some I did not. This one is easy to prepare and cook. How finely you chop the veggies is up to you. In this picture, i have cut very big chunks of pepper, however I would recommend chopping it a bit smaller.
Ingredients You'll Need
1 tablespoon olive oil
1 onion, finely chopped
Salt and pepper
2 garlic cloves, grated, finely chopped or crushed
2 red chillies, deseeded and finely chopped
3 red peppers, deseeded and roughly chopped
350 g gluten free pasta
handful of basil leaves, torn
15 g Parmesan cheese, grated
Balsamic vinegar (optional)
Directions
Heat oil in large frying pan, add onion, and cook on a low heat for 5 minutes or until soft and translucent. Season with salt and pepper. Add garlic and chillies and cook for a few seconds more. Add peppers and cook, stirring occasionally on a low heat for 5 minutes or until soft
Meanwhile cook the pasta in a pan of boiling water for 8 minutes or until it is cooked, but still firm to the bite. Drain, return pasta to the pan and combine with pepper mixture. Add basil and toss well. Sprinkle with balsamic vinegar and Parmesan and serve.
