Why I Love This Recipe

This dish is inspired by one of our clients bringing in fresh local peaches, helping support your local farms or farmers market is a great way to open your world of cooking. It can also be a great way to find affordable organic ingredients and makes for a great family outing.


Ingredients You'll Need

5 fresh peaches cut into 1/2 in cubes
1 cup of fresh raspberries
2 tablespoons of honey
1 teaspoon kosher salt
1 teaspoon fresh lemon juice
1 cup old fashion oats
1 cup organic coconut shavings
2 tablespoons of honey
1 Pinch of kosher salt
2 tablespoons of coconut oil


Directions

1. Peel and chop up the peaches into 1/2 inch cubes.


2. Add raspberries and peaches into a bowl with 1 teaspoon of the kosher salt and 2 tablespoons of honey.


3. Mix peaches and raspberries together and let sit for 10 minutes.


4. Combine oats, coconut shavings, coconut oil, salt, and mix thoroughly.


5. Place fruit mixture in an oven-safe dish then coat the top with the oat mixture.


6. Bake at 375 for 20 minutes covered then remove cover and back for 10 more minutes or until oat topping is golden brown.
