Why I Love This Recipe

Energy balls are very easy to make and even easier to eat.

These make excellent travel snacks, bring to sports events or share with your friends.

Healthy choices are easy to make when you have these on your plate.


Ingredients You'll Need

1/2 cup almonds (soaked)
1/2 cup cashews
1/2 cup coconut
1/2 cup goji berries
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 cup pitted dates
2 Tbsp lemon juice
pinch of salt

shredded dried coconut for coating


Directions

Process all ingredients except for dates and lemon juice in your food processor until crumbly.
Add the dates and lemon juice and continue to process until mixture starts to ball up.


Scoop and hand roll into balls.
Roll in shredded coconut to coat.
Store in the fridge or freezer.


Pairs Well With

Nut Milk, tea or coffee
