Golden Eggplant Casserole

Serves 6 servings | Prep Time | Cook Time

Ingredients

2 1/2 c. cubed peeled eggplant
18 saltine crackers, crumbled
1/2 c. shredded, sharp cheese
1/4 c. chopped celery
2 Tb. chopped pimiento
1 Tb. melted butter
1/2 tsp. salt
1/8 tsp. pepper
1 c. light cream or evaporated milk


Cook eggplant in boiling salted water 10 min; drain. Combine with remaining ingredients.


Turn into 1 qt. casserole. Bake in 350º oven 45 min.
