Golden Raisin Cookies

Serves About 6 Dozen | Prep Time | Cook Time 8-10 minutes

Ingredients

1 cup butter, softened
1 1/2 cups sugar
1 tbsp lemon juice
2 eggs
3 1/2 cups flour
1 1/2 tsp cream of tartar
1 1/2 tsp baking soda
1 pkg. (15 oz.) golden raisins (2 1/2 cups)


In a large bowl, cream the butter and the sugar until light and fluffy.


Add the lemon juice and the eggs


Combine the dry ingredients


Gradually add to the creamed mixture.


Stir in the raisins


Roll into 1 inch balls


Place on greased baking sheets


Flatten with a floured fork


Bake at 400 F for 8-10 minutes or until lightly browned
