- 1/2 cup unsweetened cocoa powder
- 1/3 cup sugar
- 1/3 cup brown sugar, packed
- 3 tablespoons butter
- 1/2 cup whipping cream
- In a small bowl stir together cocoa powder, sugar and brown sugar, set aside. In a heavy small saucepan melt butter with cream over low heat, stirring constantly. Cook and stir over medium heat about 3 minutes or until mixture bubbles around edges. Add sugar mixture, cook, stirring constantly for 1-2 minutes more until sugar is dissolved and mixture is smooth and thickened. Serve immediately. Or, cover and store in the refrigerator up to one week. To reheat on stovetop in a small heavy saucepan stir sauce frequently over low heat. Makes 1 cup.
