Gooey Chocolate Muffins
2 cups flour
2 tablespoons cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sugar
1/2 cup grated milk chocolate
2 teaspoons vanilla
6 tablespoons butter, melted and cooled
1 cup sour cream
1/2 cup dark chocolate squares
2 tablespoons dark chocolate chunks or chocolate chips
Preheat oven to 350 degrees.
Grease or spray 15 muffin cups.
Combine flour, cocoa powder, baking soda, salt, sugar, milk chocolate, eggs, vanilla, butter and sour cream in a mixing bowl.
Beat for 1 minute on low until combined; turn to high and beat for 1 additional minute.
Spoon half the batter into muffin cups.
Place a square of dark chocolate in each cup and top with remaining batter.
Press several chocolate chunks or chocolate chips on top of muffins.
Bake for 15 minutes, until puffy.
Centers will still be gooey.
