Why I Love This Recipe
A friend made the most amazing garlicky clam sauce, and I've adapted it for this recipe - use with shrimp, clams, lobster, tilapia, any fish you like. Serve over pasta, and yes, you can grate cheese on top (though they will kick you out of Italy if you try that there!!) I've found that using the lemon zest really kicks up the flavor of lemon, so I've included the zest of one half of a lemon in the recipe.
The beauty of this dish is it can also be made in heavy duty throwaway aluminum pan right on the BBQ!!! Just make the sauce on the stove, pour all ingredients into a heavy aluminum pan, cover very tightly and cook on the grate at medium heat for about 20 minutes, or until the clams open and the shrimps are cooked! AMAZING! YOU MUST SERVE THIS WITH A GOOD CRUSTY LOAF (OR MULTIPLE LOAVES) OF ITALIAN BREAD, OR MAKE GARLIC BREAD WITH SOME OF THE SAUCE FROM THE SCAMPI!!!
Ingredients You'll Need
1 lb. of large shrimp and a dozen clams
One stick of salted butter
1 Tablespoon olive oil
6 cloves of garlic minced
Handful of Fresh parsley, chopped
1 small onion, diced into small pieces
Juice of 2 lemons
2 small bottles of clam juice
1/2 lemon zest
1/8 teaspoon Red crushed pepper
Pasta:
One pound of linguini/angel hair/spaghetti cooked al dente
Directions
Saute the onions in butter and olive oil on medium flame.
When translucent, add the garlic and sauté for a minute or so on medium to low flame
Add the lemon juice, lemon zest, clam juice chopped parsley and crushed red pepper
Add clams/shrimp or any fish you like
Cook covered for 3-5 minutes on low flame until clams open and shrimps are pink.
Garnish with chopped parsley
Serve over pasta (you can remove the fish and finish the pasta in the sauce.
Plate with pasta on bottom of large dish and place fish on top with the parsley garnish
