GRAM'S CHICKEN SOUP

Ingredients

  • 1 large roasting chicken
  • 3 sprigs of fresh parsley
  • 3 chopped celery stalks
  • 3 chopped onions
  • 4 sliced carrots
  • 6 cups chicken broth
  • 1 pkg egg noodles
  • salt and pepper to taste

Directions

  • Put all ingredients into a large stock put and simmer for 60 minutes until chicken is cooked through and tender. Remove chicken and shred meat. Return shredded chicken to the pot and season to taste.

Notes

My Gram's house always smelled like fresh chicken soup. Somehow, I think she made a fresh pot every day -- no wonder she stayed so thin!
