Gramma's Amish Custard Pie
1 9" pie shell
1/2 cup sugar
1/4 tsp. salt
1 tsp.vanilla extract
2 1/2 cups milk
1/3 tsp. ground nutmeg
Line the pie pan with foil and bake @ 450 for 8 minutes.
Remove foil and bake 5 minutes longer.
Remove from oven and set aside.
Seperate one egg; setting aside the white.
In a mixing bowl beat the egg yolk and remaining eggs together.
Blend in sugar, salt and vanilla; stir in milk.
Beat the remaining egg white until stiff peaks appear;fold into pie mixture.
Pour into crust.
Cover edges of pie crust.
Bake @ 350 for 25 minutes.
Remove foil and bake 15 minutes longer till pie is set.
Remove from oven and cool.
Sprinkle with nutmeg
