Grandma's Apple Muffins

Serves 12 | Prep Time 10 to 20 minutes | Cook Time 20 to 25 minutes


1 egg
one half cup milk
2 tablespoons of vegetable oil
one fourth cup of firmly packed brown sugar
2 tablespoons honey
one and one half cups of flour
1 tablespoon baking powder
one half teaspoon cinnamon
one eighth teaspoon nutmeg
1 firm, tart baking apple, peeled, cored and chopped.

Topping: 3 tablespoons sugar
one half teaspoon cinnamon
3 tablespoons finely chopped nuts (preferably pecans)

Preheat oven to 375 degrees. Beat egg slightly, and add milk, oil, sugar and honey. In separate bowl combine flour, baking powder and spices. Add to egg mixture, stirring just until moistened. Stir in apples. Fill greased muffin tins. Mix topping ingredients together, and spoon over batter (about one teaspoon for each muffin). Bake for 20-25 minutes.

These are delicious! I was baking for a lot of people, so I doubled the recipe and used mini-muffin tins. (They only needed 10 minutes because of the apple chunks!) I also tried it out with 2 cups of all-purpose and 1 cup of whole-wheat flour; they were great! Thank you for sharing this recipe!
