Grandma's Custard Rice Pie for Easter
12- beaten eggs, 1c. sugar; 4c. warm milk; 2t.vanilla; 1&1/2c. cooked rice, you can use instant; a 1/4c. mixture of cinnamon and sugar; 1/2 stick of butter in pieces.
Butter a 9"x13" baking dish. Glass works the best. In a large bowl mix together very well, the eggs, the 1c. of sugar, the rice, vanilla and milk. Pour this into the baking dish. Next, place the butter pieces all around the dish over the rice mixture. Last, sprinkle lightly with the cinnamon/sugar mixture over the dish. Bake @ 359F for 30 to 40 minutes. It should set like a custard. Enjoy!
