Why I Love This Recipe


Ingredients You'll Need

Grandma's Oatmeal Cake:
1 c. oatmeal
1 1/4 c. boiling water
1 stick butter
1 c. brown sugar
1 c. white sugar
2 lg. eggs slightly beaten
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
1/2 tsp nutmeg
1 tsp. vanilla
TOPPING:
6 Tbl butter (room temperature)
1/2 c. brown sugar
1/4 c. evaporated milk
1 c. chopped nuts
1 c. shreded coconut
1 tsp. vanilla


Directions

Preheat oven to 350º.


Lightly grease a 9 x 13 pan.


In a large mixing bowl put butter, oats, and boiling water, cover and let stand for 20 minutes.


Add the white sugar, brown sugar, eggs, flour, soda, salt, nutmeg, cinnamon and vanilla to the oatmeal mixture; mix well.


Pour into the greased pan and bake 35 minutes. While the cake is baking prepare topping.


Topping:


Stir together butter, evaporated milk, sugar, vanilla, coconut, nuts and vanilla; spread over cake as soon as it comes from the oven.


Put under broiler to lightly brown.


Watch it carefully as it will burn very easily if left under too long.
