Why I Love This Recipe

My Great-Grandparents were immigrants from Denmark to the United States. My extended family is large and diverse, but food is the common denominator that brings us all together.

There's something about making fritters with my mother and my grandparents that brought us all together and had us laughing. Usually it was a 3 or 4 person job to make these quickly.

My Grandma would make the batter, my mother would drop them into the oil, I would roll them in the sugar & my Grandpa would steal them and eat them hot :)

Ingredients You'll Need

raisins
3 cups scalded milk
2 pkg dry yeast
3 cups water
2 Tbsp sugar
1 Tbsp margarine
1 cup warm water
5 tsp salt
¼ cup white granular sugar
16 cup flour

Directions

Boil raisins; drain. Set aside.

Dissolve yeast and 2 Tbsp sugar in warm water. Set aside to double.

Combine scalded milk, water, margarine, salt, and sugar. Add yeast mixture (make sure milk mixture is not hot). Add 6 cups flour by mixer. Gradually add remaining 10 cups by hand. Add raisins to dough. Let rise until double in size.

Heat oil in a deep fryer or deep pot. You will need to be able to fit your fritter into the oil.

Form into a figure 8. Deep fry until brown. Roll in sugar. Enjoy!
