GRANDMA ESTELLE'S CLAM SAUCE

Ingredients

  • 3 cloves chopped garlic
  • 1/3 cup of olive oil
  • Peeled Tomatoes
  • 12oz can tomatoe paste (Hunts brand)
  • 18oz bottle clam juice
  • 3 tbs Parsley
  • 1 tsp Oregano
  • 1/2 tsp Basil
  • some Thyme
  • a little sugar
  • 1 small white onion chopped
  • 3 or 4 cans of minced clams (snows brand)
  • Linguini and bread :)

Directions

  • Chop the Garlic and Onion
  • In large pot combine mix all above ingredients except the onion and clams
  • Mash the peeled tomatoes with your hands, add the juice from the can too
  • In a large skillet saute the onion and clams and the juice they were in with olive oil and a little lemon juice for apx 10 minutes
  • Add the clam mixture to pot and let the entire thing cook uncovered for a minimum of 15 minutes! Pour over Linguini and serve with parm cheese and bread for dipping! enjoy!!
  • (I usually make this for 2 or 3, then freeze the rest for another day)

this is my Grandpa's favorite thing to eat :)
