Why I Love This Recipe

Jim's mother made this cake almost every time we visited. I'm not sure where she got the recipe, but it was probably from the food section of the Jasper Newsboy or Houston Chronicle. My kids' favorite dessert! Rich, but SO yummy!


Ingredients You'll Need

Cake:
2 c. sugar
1 c. Crisco shortening
1/3 c. Cocoa
1 c. pecans, chopped
4 large eggs
1 1/2 c. all-purpose flour
1 T. vanilla extract
Pinch of salt
Icing:
7 oz. jar marshmallow creme
1 stick margarine
1 t. vanilla extract
1 lb. powdered sugar
1/2 c. evaporated milk
1/2 c. Cocoa
1 c. pecans, chopped


Directions

Preheat oven to 350 degrees.


Spray 13X9X2 pan with Pam.


Combine all cake ingredients except marshmallow creme.


Mix by hand and beat until smooth.


Pour into prepared pan.


Bake for 35 minutes.


Spread marshmallow creme on top and return to oven for 5 minutes.


Remove from oven and cool.


Prepare icing by combining all icing ingredients except nuts.


Let sit about 30 minutes.


Beat until smooth.


Spread icing on cake.


Sprinkle with nuts.
