Grandmother Hamilton's Fruit Cocktail Cake

Ingredients

1/2 cup shortening
1 cup sugar
2 cups fruit cocktail with liquid
2 cups flour
2 tsp baking soda
2 eggs
1/2 cup coconut
1/2 cup brown sugar
3/4 cup butter
1/2 cup evaporated milk
1 stick margarine
1 tsp vanilla
1/2 cup coconut


Cake


1 Put shortening, sugar, flour, soda and eggs in bowl; mix.. Put in a floured pan 9x 13 pan


2 Add fruit cocktail and mix lightly.


3 Sprinkle coconut and brown sugar on top of doug and bake at 350 degrees. Cool and leave in pan.


Icing


1 Boil sugar, milk, and butter for 1 minute. Add vanilla and coconut. Beat slightly and put on cake while warm


Oven Temperature: 350°F

This recipe is from Lee Verne Smith's mother. I remember my grandmother making this cake . I have a recipe writing in Grandmother Hamilton's handwriting.
