GRANNY APPLE COFFEE CAKE (CAROLINA THYME)

Ingredients

  • 1 c sugar
  • 1 c chopped nuts
  • 1/3 c brown sugar
  • 1½ t cinnamon
  • 1 c butter
  • 1 c sugar
  • 2 eggs
  • 1 t vanilla
  • 2 c flour
  • 1 t baking soda
  • 1 t baking powder
  • ½ t salt
  • 1 c sour cream

Directions

  • Combine 1c sugar, 1c chopped nuts, 1/3 c brown sugar and 1 ½ t cinnamon in small bowl and set aside.
  • Beat 1c butter and 1c sugar until light and fluffy.
  • Add 2 eggs, 1 at a time.
  • Add 1t vanilla.
  • Sift 2c flour, 1t baking soda, 1t baking powder, and ½ t salt.
  • Add to creamed mixture, alternately with 1c sour cream.
  • Fold in 2c chopped peeled apples.
  • Pour half of batter into 9x13 pan, sprinkle with ½ of nut mixture.
  • Top with remaining batter and nut mixture.
  • Bake at 350 for 35-40 min.
