1 box Duncan Hines Devil's Food Cake Mix (made with applesauce and egg substitute) OR your fav. chocolate cupcake recipe
1 can of chocolate icing (I prefer the whipped kind) OR your fav. chocolate icing recipe
Prep your cupcake mix as directed and add 1 tsp mint extract.
Crush 20+ cookies into crumbs.
Fill cupcake cups half full with mix, then spread a layer of crumbs, and then fill cupcake cups to top with mix.
Bake as directed. Once cooled, mix chocolate icing with 1 tsp. mint extract.
Ice cupcakes and place a half of a cookie on top.
