Greek Green Beans
3 lb fresh green beans
1 large can tomatoes
1 bunch Italian flat leaf parsley
5 cloves garlic, peeled and chopped
2 large onions, peeled and chopped
1/2 cup olive oil
salt and pepper to taste
Saute onions and garlic in olive oil. Add tomatoes and about 2 tomato cans of water. Boil. Add parsley. Boil. Add beans, making sure they are covered by water. Bring to boil, then simmer one hour. Check. Then simmer another 1/2 hour, check. Simmer another 1/2 hour and check again. Beans should be completely tender. Add salt and pepper.

We've made this almost every Christmas and Thanksgiving for years--it's always a huge hit, so I make plenty for leftovers. Grace is really good at prepping the beans. The recipe is from Maria, my Greek mother-in-law, in the traditional Greek style of loose measurements, and lots of boiling.
