1/2 cup cream (half/half or substitute 2% milk)
2 cups Fresh Spinach
3/4 cup Feta Cheese
6-8 slices bacon
1 small onion
Salt and Pepper to taste
1 store bought pie crust (deep dish works best)
Crack eggs into a large mixing bowl and scramble.
Add cream, salt and pepper.
Fry bacon in a large skillet until crisp, drain on papertowel and crumble.
Reserve 1 tablespoon of bacon drippings.
Saute onion in bacon drippings until soft.
Add spinach to pan and saute until all of the spinach is wilted.
Add the feta cheese, crumbled bacon, onions and spinach into the scrambled egg mixture and stir until well combined.
Pour into pie crust.
Bake at 350 until the top is golden brown and the center is set, about 1 hour.
