Ingredients

3 tomatoes (cut in 8)
1/2 cucumber (cut in the middle at length and then slanting into thin slices)
1 green pepper (cut into small sticks)
1 medium onion (cut into thin slices)
2.8 oz sliced and pitted Kalamata olives
1/2 tbsp fresh chopped oregano
2tbsp spearmint
salt
2tbsp elixir (vinegar)
7 oz feta cheese
ground black pepper
1/2tbsp hot cayenne pepper
9.6 tbsp extra virgin olive oil
4 greek pita (cut into triangular small pieces)

Step 1: Prepare the salad. Place the tomatoes, cucumber, pepper, onions, olives, oregano, the spearmint and the flower of salt in a bowl and drizzle with 100g of olive oil and the elixir. Mix very well and set aside.

Step 2: Prepare the cheese. Place the feta cheese in a bowl and break it in very small pieces with a fork. Add the black pepper, the red hot pepper and 50g of olive oil. Mix well as if you are making a cheese sauce. Set the cheese aside.

Step 3: Prepare the pita bread. Arrange the pita on a baking pan lined with baking paper, sprinkle with some salt and bake in a preheated oven at 200°C for approximately 10 minutes.

Step 4: Arrange half of the pita on a platter and spread them. Put the salad on top of them and arrange spoonfuls of the cheese irregularly. "Nail" the rest of the pita pieces on the salad and serve.
