Green Beans and Carrots
1 pound fresh green beans diced
2 carrots diced
water to cover green beans and carrots about 2 inches over
1 large onion chopped
3 garlic cloves minced
3 roma tomatoes diced
dash of olive oil
salt and pepper to taste
Cook green beans and carrots for 15 minutes or until tender in boiling water then drain and set aside.
In pan saute onions, garlic and tomatoes with oil and add green beans and carrots to the pan.
Salt and pepper to taste.
Cook and stir for 2 more minutes.
