Green Beans and Cashews

Ingredients

1 pounds fresh green beans
2 tbls margarine/butter
1/2 cup finely chopped onion
1/2 cup cashews
1/2 tsp lemon juice
1 tbl chopped parsley
1/2 tsp salt
1/4 tsp pepper


Cut off ends of beans and cut beans into 2-3 inch pieces. Cook beans in boiling water in large saucepan 7-9 minutes (till tender yet slightly crisp). Drain and rinse with cold water.


Melt butter in large skillet and saute onion till tender.


Add beans and cashews.


Cook till warm.


Stir in lemon juice and parsley.


Add salt and pepper.
