Green Chile Rice
1 (4.5-oz) can chopped green chiles, undrained
1 (16-oz) container sour cream
3 cups cooked white rice
1 lb. Monterey Jack cheese, sliced
2-3 cups shredded cheddar cheese
Preheat the oven to 350 degrees.
Spray 9"x13" baking dish with nonstick cooking spray.
In a small bowl, mix together the green chiles and sour cream.
Please about half of the rice in the baking dish.
Add a layer of half the sour cream mixture over the rice.
Arrange about half of the Monterey Jack cheese over the sour cream.
Repeat the layering once more, ending with the Monterey Jack cheese.
Cover the top with cheddar cheese.
Bake uncovered for 30-45 minutes, or until the cheese is bubbly and slightly brown.
Let sit for 10-15 minutes before serving.
