Green Split Pea Soup

Ingredients

8 cups water
1 lb. green split pea
2 vegetable bouillon cubes
2 carrots sliced
2 celery stalks sliced
1 teaspoon fresh oregano chopped finely
1 onion chopped
5 garlic cloves minced
dash of olive oil
salt and pepper to taste
parsley for garnish


In pot boil water with split pea and bouillons then simmer for 40 minutes.


Add carrots, celery and oregano to pot.


In pan saute onions and garlic with oil and add to pot and cook another 40 minutes or until peas are soft.


Salt and pepper to taste.


Pairs Well With


Notes

Green split peas do not require soaking.

Green split peas soak up a lot of water so you may have to add more water.
