Green Split Pea Soup
8 cups water
1 lb. green split pea
2 vegetable bouillon cubes
2 carrots sliced
2 celery stalks sliced
1 teaspoon fresh oregano chopped finely
1 onion chopped
5 garlic cloves minced
dash of olive oil
salt and pepper to taste
parsley for garnish
In a large pot sauté onions and garlic in olive oil.
Add carrots, celery split pea and water.
Bring to boil and add bullion cubes.
Simmer for 1 hour or until peas are soft.
Salt and pepper to taste.
Garnish with parsley.
Pairs Well With
Green split peas do not require soaking.
Green split peas soak up a lot of water so you may have to add more water.
